                                      SEASONAL FRUIT FLOWER CAKE
                                      This is an excellent celebration cake. Consisting
                                      of three layers of the light genoise sponge, the
                                      cake’s formed with seasonal fruit from Rusty’s,
                                      fresh whipped cream and finished with a fruit
                                      puree glaze. El then decorates the cake with the
                                      prettiest flowers to be found at Cairns Flower
                                      Market.















                                                                         SECRET RECIPE SWEET
                                                                         POTATO CAKE
                                                                         The creative mind behind Ah-
                                                                         Room, El Jin, has developed this
                                                                         recipe after many tests and trials.
                                                                         El wanted a cake with an interesting
                                                                         balance of textures between the
                                                                         pillowy genoise sponge, smooth
                                                                         whipped cream and velvety sweet
                                                                         potato mousse. Sweet potato has a
                                                                         natural sweetness (aptly named), so
                                                                         El only uses a little cane sugar to let
                                                                         the natural flavour really shine.














                            MATCHA STRAWBERRY
                            MONT BLANC
                            An Ah-Room take on the classic Mont Blanc dessert,
                            named after the snow-capped mountain it resembles.
                            This six-layered showstopper has a thin and crispy biscuit
                            base, covered in a matcha and white chocolate ganache.
                            A fluffy matcha genoise sponge follows, where a hidden
                            strawberry forms the peak of this sweet mountain. Matcha
                            cream covers the strawberry before the entire dessert is
                            smothered in a vermicelli-style strawberry cream.
