           Holiday Inn Cairns is launching
           a new paddock-to-plate
           restaurant and bar.
For years, the potential for tropical
           produce, local products and native
ingredients to be a selling point for our
           region has been under-cooked. But
there’s a growing realisation that food
tourism holds great potential as a unique
selling point around the world. As the
tastes of travellers change, so too is the
           menu at Holiday Inn Cairns
           Harbourside.
In further proof the local hotel Holiday Inn Cairns Harbourside
sector is entering a new phase of MUST
           investment and reinvigoration,
Holiday Inn is launching a new TRY
           offering called Harbourside Bar &
           Kitchen. Formerly Teshi's
           Restaurant and Blue Mango Café
Wine Bar, the new venue will use local
food and beverages as inspiration for its
           paddock-to-plate concept.
Mt Uncle Gin, Sipping Duck Coffee,
           Tablelands lamb and locally caught
           barramundi are among the new
           offerings. Signature dishes will include
           Tablelands Lamb Fillet with Davidson
Plum Jam, and TNQ Crusted Barramundi
           topped with Wondaree Macadamias. One
of the most interesting new menu items
is the Uncle Duck Espressotini, mixing
gin from Mount Uncle and coffee from
           Sipping Duck.
           Holiday Inn Cairns Harbourside general
           manager Nick Henderson said the
Harbourside Bar & Kitchen features a
           laid-back casual dining atmosphere with
high ceilings and eclectic décor, all
complemented by an outlook to the lush
           green parklands of the Esplanade.
“We are so proud of Harbourside Bar &
Kitchen,” he said. “We have created a new
